Treacle toffee


My mother's simple recipe, begged from her when DS and DD were old enough for our own bonfire and all the trimmings.

½lb (225grms) brown sugar (dark brown or Demerara)
1oz (30grms) butter
1 small teaspoon vinegar (malt will do)
2 tablespoons black treacle (molasses)
1 tablespoon cold water

Put all the ingredients into a large pan and heat gently, stirring constantly, until the sugar has completely dissolved.

Boil hard for 10 to 15 minutes, until the mixture reaches 150oC/300oF on a sugar thermometer, or a drop hardens instantly when dropped into cold water.

Pour into a well-greased baking tray and leave to cool. When completely cold break up with a hammer. The odd shapes are part of the fun. J
